Recipe makes 4 servings.
• 3 cups non-dairy milk
• 1/2 cup chia seeds
• 1 tsp pure vanilla extract
• 1-2 tbsps raw honey or pure maple syrup (optional)
• 1/2 tsp organic cinnamon powder (optional)
1a. For blended/smooth pudding: Place all ingredients in blender & blend on high for 1-2 minutes until completely smooth.
1b. For whole chia seed pudding: Blend all ingredients except chia seeds in a blender until smooth (including any added flavors, spices, extracts, etc). Whisk in chia seeds.
2. Pour mixture into a jar or glass container & place in the refrigerator for at least 4 hours or overnight to let thicken. Stir or whisk a few times within the first hour to help it combine more evenly. Enjoy plain or top with any combination of flavorful spices, fruits, nuts & seeds, cacao nibs, coconut flakes, etc. The possibilities are endless!
